Paximadia (Zwieback)
1 cup vegetable oil
1 cup granulated sugar
3 large eggs
3 1/2 to 4 cups flour, divided
1 tablespoon baking powder
1 1/2 teaspoons cinnamon
1/8 teaspoon nutmeg
1/2 cup chopped walnuts
1/4 cup toasted sesame seeds
Preheat oven to 350 degrees F.
Lightly grease two baking
sheets.
Beat oil and sugar.
Add eggs one at a time.
In bowl, measure and mix together 2 cups flour, baking powder,
cinnamon, nutmeg, nuts, and sesame seeds.
Add flour mixture to egg
mixture and add remaining flour as necessary to make a soft dough.
Divide dough into four equal balls.
Roll each to 12 inches long x 3
inches wide and 1/4-inch thick.
Bake for 15 minutes on prepared
baking sheets.
Remove loaves from oven.
While warm, slice 3/4-inch thick
diagonally or straight across.
Place each slice cut side down back
on baking sheet.
Return to oven and lightly brown about 5 minutes
per side to make a light toast.
Yield: 5 dozen
